Ingredients
  1. 1 cup spelt flour
  2. 1 cup canned organic pumpkin puree
  3. 1 tbsp ground cinnamon
  4. 1/4 tsp ground ginger
  5. 1/4 tsp ground cloves
  6. 1/4 cup coconut oil, melted
  7. 6 tbsp maple syrup
  8. 1 tsp vanilla
  9. 1 egg(can omit if you don't want egg)
  10. 1 tsp baking soda
  11. 1 tbsp apple cider vinegar
Instructions
  1. Preheat oven to 350F and line a loaf pan with parchment paper-not wax paper
  2. In a mixing bowl, whisk together all the dry ingredients. Stir in the wet ingredients, except add the apple cider vinegar at the very end.
  3. Transfer to a loaf pan and smooth the top. Bake for 50-60 minutes depending on your oven. Vheck it at 50 minutes and bake longer if needed. It is cooked when a toothpick inserted comes out clean and dry. Allow to completely cool before slicing and serving.
Notes
  1. Store in an airtight container or in the fridge for one week. But I bet it doesn't last that long!
