
Chocolate Waffles

Chocolate for breakfast? Oh yes you can! These vegan waffles are delicious and nutritious.
Ingredients
- 1 1/2cups of spelt flour
- 1 1/2 cups almond milk
- 1/4 cup melted coconut oil
- 3 tbsp ground flax
- 9 tbsp water
- 1/4 cup raw cocoa powder
- 2 tsp coconut sugar
- 1 tsp vanilla extract
- 1 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Mix the ground flax seeds and water and set aside for 10 minutes. Mix almond milk, coconut oil, cocoa powder, sugar vanilla and flax eggs to a bowl. Stir in flour, baking powder, baking soda, and salt and whisk together to avoid lumps. Cook in a waffle iron according to manufacturers instructions then serve with fresh strawberries and coconut cream whipping cream. YUM
Notes
- To make the coconut cream whipping cream chill a can of full fat coconut cream overnight and an hour before chill a bowl in the frezzer as well. Flip the chilled coconut milk upside down, open the can and pour out the water ( save it for smoothies) Scoop the cream into the chilled bowl, and with a hand mixer beat the cream until fluffy like whipped cream. Add 1/2 tsp vanilla and 1-2 tbsp maple syrup and beat to just combine.Cover bowl and chill until needed. It will firm when chilled, and soften at room temperature. It will keep in the fridge in a sealed container for 1 to 2 weeks.
